We would keep cattle even if we didn’t eat beef. These heroic animals are the best way to care for the grasslands. Since we do harvest them for food, we should pay proper respect and use the whole animal. Most small processing plants can only sell the muscle meat, they pay to dispose of the rest: hide, hooves, offal, bones. This is why they’re not financially or spiritually competitive with the “Big Four” meatpackers. They will complain, but they do not deserve to win until this is solved.

Our mission is to use every part of these great animals, out of respect to them and also because these are the most nutritious and delicious food products on the planet. It’s particularly galling that the “waste” is often the most desirable parts of the animal. Ask wolves. Wolves know these things.

In short takes incredible energy to produce and it’s a sin to waste anything. We use these things to make amazing products.
