The pancake that climbs the pan

Six eggs. Twenty minutes. The oven does the work.
Around here most families call these German pancakes. Coastal food writers call them Dutch babies. Same thing: an egg-heavy batter poured into a hot buttered pan, where oven heat inflates it into cliffs and canyons. The rise is pure egg protein — which means the more structure your eggs have, the higher it climbs. Fresh pasture eggs climb.
German Pancake
Ingredients (9×13 pan, serves 4–6):
- 6 eggs
- 1 cup whole milk
- 1 cup all-purpose flour
- ½ tsp salt, 1 tsp vanilla
- 4 Tbsp butter
Steps:
- Heat oven to 425°F with the butter in the 9×13 pan — let it melt and start to foam.
- Blend eggs, milk, flour, salt, vanilla until smooth (a blender gives the best rise).
- Pour batter into the hot buttered pan. Do not stir.
- Bake 20–22 minutes. No peeking — opening the door deflates it.
- Serve immediately with lemon and powdered sugar, or syrup. It falls within minutes; that's normal.
Strawberry variation: scatter 2 cups halved strawberries tossed in 2 Tbsp sugar over the batter before baking. Comes out somewhere between a pancake and a clafoutis.
