Granny's casserole + maple granola
October 20, 2026. Granny's Christmas morning casserole, put together the night before and baked in the morning. We doubled the eggs, eight instead of four, so it comes out richer and more custardy. We used wheat bread and bacon this time. Sausage works just like the recipe says. Good for a holiday morning, a weekend brunch, or a full house.

Granny's Christmas Morning Egg and Sausage Casserole
Ingredients (9x13 dish)
- 10–12 slices white bread, crusts removed, cubed
- 2 cups grated cheddar cheese
- 1 lb link sausage, cut in fifths
- 8 eggs
- 2¼ cups milk
- ¼ tsp dry mustard
- 1 can (10¾ oz) cream of mushroom soup
- ½ cup milk
Steps
- The night before: Spread the cubed bread in a 9x13 baking dish. Top with the cheese.
- Brown the sausage and drain (or use precooked frozen sausage). Arrange over the cheese.
- Beat the eggs with 2¼ cups milk and the dry mustard. Pour over everything in the pan.
- Cover and refrigerate overnight.
- In the morning: Thin the soup with ½ cup milk and pour it over the casserole.
- Bake at 300°F for about 1½ hours, until the center is set.
Tip: With eight eggs there's more custard, so check the middle before you pull it. It should be set, not jiggly.
Special this week: Mary's maple granola

Mary is in Chile, but she left some ingredients so we used her recipe to bake up a fresh batch. We can't promise it's healthy like our eggs, but it is delicious.
