Why a soft yolk from our hens is worth it: cooking the white all the way frees up its biotin (raw whites lock it away), the B vitamin known for hair and nails. A shorter cook is gentler on the yolk's lutein, an antioxidant tied to skin and eye health. And because our hens forage and spend their days in the sun, studies of hens raised this way find their eggs carry up to 2 to 3 times the vitamin E, omega-3s and vitamin D of eggs from caged hens.
Ingredients
- Large eggs, cold from the fridge (1 to 6)
- Ice water
- Flaky salt, black pepper, and paprika
Steps
- Boil: Bring about ½ inch of water to a full boil in a saucepan that has a lid.
- Add the eggs: Set the cold eggs in gently with a spoon or tongs. It's fine if they aren't covered. Put the lid on and start a timer right away.
- Time it: Runny yolk, for dipping toast: 6½ minutes. Gooey, jammy yolk like the photo: 7 minutes. Soft but set, for slicing: 8 minutes.
- Ice: Move the eggs straight into a bowl of ice water for about 2 minutes to stop the cooking.
- Peel and season: Crack the egg all over, starting at the wide end, and peel it under a thin stream of cold water. Sprinkle with flaky salt, pepper, and paprika.
Tip
Farm-fresh eggs are hard to peel. Dropping them into water that's already boiling and then chilling them in ice helps a lot. If you're peeling a bunch, use eggs that have been in your fridge for a week or so. Every stove is a little different, so cook one test egg first and adjust by 30 seconds.
Good with
a dusting of paprika and flaky salt, buttered toast cut into strips for dipping, a bowl of ramen, grits, or a salad. Soft-boiled eggs keep peeled in the fridge for up to 3 days. Warm them in hot water for a minute before eating.
